Chicken Breasts in Tomato Sauce
Ingredients
- 2 Tablespoons Olive Oil
- 4 Chicken Breasts Boneless, skinless
- Salt To taste
- Freshly Ground Black Pepper To taste
- 1 Tablespoon Butter
- 1 Onion Finely diced
- 2 Cloves Garlic Minced
- ½ Can Razmin Tomato Paste
- 2 Tomatoes Cut and diced
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Dried Basil
- ⅓ Cup Water
- ¼ Cup Drained Capers
- ¼ Cup Parsley Chopped (For garnish)
Instructions
- Heat olive oil in a large skillet.
- Season chicken with dried basil, salt, and pepper.
- Add the chicken breasts to the skillet and cook over medium-high heat, for 3 to 4 minutes per side, or until lightly browned.
- Remove chicken breasts from skillet; set aside.
- Add butter to the skillet and melt.
- Add diced onions and cook for 2 minutes.
- Stir in garlic and cook for 30 seconds.
- Add water to dissolve the brown pieces found at the bottom of the skillet; continue to cook for 4 minutes, or until reduced.
- Mix in the tomatoes, tomato paste, oregano, basil and capers.
- Place chicken back in the skillet.
- Bring to a boil; cover and simmer over medium-low heat for 8 minutes, or until chicken is cooked thoroughly.
- Remove from heat.
- Garnish with parsley and serve.

Mozzarella Chicken in Tomato Sauce
Ingredients
- 1 Teaspoon Dried Basil
- 1 Teaspoon Dried Parsley
- ½ Teaspoon Ground Oregano
- Salt To taste
- Freshly Ground Black Pepper To taste
- 1 Tablespoon Olive Oil
- 2 Skinless and Boneless Chicken Breasts Halved to make 4 fillets.
- 1 Teaspoon Garlic Minced
- ½ Can Razmin Tomato Paste
- 1-2 Teaspoons Any Italian Seasoning Optional
- ½ Cup Mozzarella Cheese Shredded
- Parmesan Cheese Shredded (For garnishing)
- 2-3 Cups Cooked Pasta Any kind
- ½ Cup Pasta Water
Instructions
- Preheat the oven grill to a medium heat setting.
- Combine the herbs in a shallow bowl with salt, pepper and oil. Coat both sides of each chicken fillet with oil.
- Heat a large heavy oven-proof skillet over high heat. Add the fillets and pan-fry each side till it turns golden (about 3 minutes on each side).
- Add garlic to the same pan and allow to fry until fragrant (about 30 seconds).
- Spoon Razmin Tomato Sauce over and around the chicken. Add Italian seasonings (optional) into the sauce and stir them through.
- Sprinkle 2 tablespoons of the Mozzarella Cheese over each chicken fillet; transfer to the oven and grill until the cheese gets melted and the chicken is thoroughly cooked (about 3 to 5 minutes).
- Remove chicken from the pan when ready. Pour in the pasta water and cooked Pasta of choice. Mix through until sauce slightly thickens and becomes glossy.
- Add chicken and garnish with freshly chopped Parmesan Cheese.
